  1. In a large skillet over medium heat melt 1 Tbsp butter.
  2. Add all the onions to a large skillet and let caramelize, stirring occasionally, about 20 minutes. When caramelized, add the beef broth and sherry and let reduce until onions are soft and “jam-like”. Fold in chopped thyme.
  3. Layer 4 slices of bread with ¼ cup of cheese, about ½ cup caramelized onions, and another ¼ cup cheese. Top with another slice of bread.
  4. Over medium heat in the large skillet, melt the rest of the butter. Cook the sandwiches until both sides are toasted brown and cheese is melted. Serve warm.
