CAPRESE POLENTA GRILLED CHEESE

Ingredients
  • 1 tube polenta
  • 1 c Cello Ultimate Grilled Cheese Blend
  • 12 basil leaves
  • 2 Tbsp. olive oil (plus 1 Tbsp more if needed)
  • 1 c marinara sauce
  • 6 fresh basil leaves
  1. Cut Polenta into 24 circles
  2. Onto 12 polenta circles, divide Cello Ultimate Grilled Cheese blend. Add 1 basil leaf to each and top with remaining polenta circles.
  3. Heat olive oil in a large non-stick skillet over medium-high heat. Add polenta ‘sandwiches’ and fry on each side until cheese is melted and polenta is brown and crispy.
  4. Serve with warmed marinara sauce.
